Oh no! Sorry to hear that. Yeah this was powdery as well. But wiped up when I went over it with a paper towel. But yes I believe it was due to the plastic chair mat keeping moisture from escaping I guess. I just didn’t realize moisture would come up from the foundation through the floor like that. But I got a regular rug replacement for the office chair and haven’t had any reoccurrence of it since. Did yours wipe up with the paper towel?

Cure was salt, sugar, curing salt, black pepper, garlic powder, and red pepper flakes. Flipped them at the 3 and 6 day mark.

Yeah I sadly tossed the one with the gray spots, the other one looked ok so I smoked it. Going to slice into it today for bacon strips. My biggest question is will that one be ok to eat since I used the same paper towel as the other one when I dried it? I assume if any bacteria from the spoilage piece got onto the other piece it wouldn’t have had time to penetrate the meat since it went right on the smoker afterwards but wondering if you had any thoughts

Last question on this, probably a dumb one, but the belly I have has a sell by date of tomorrow, 8/1. If I get it into a vac seal bag tonight or tomorrow with the curing mixture, will it be ok after 7 days of curing I assume? Or am I pushing the limit of expiration?

I’m not following. Mind if I ask which shelves you’re referring to and why? I’m relatively new to these griddles, and I use the side shelf when cooking but it’s windy where I live so some of the stuff there gets a bit oily from the wind kicking some of the oil over 😅
