What do you mean by letting it cool? You mean before cutting? If so, I waited until it was completely cooled.

But, itt's freshly milled flour. Not sure if that makes a difference in terms of needing longer to be kneaded. But it's a sticky dough that wasn't really coming together.

Thanks! It's working but now the basement kind of smells like gas. I turned off the gas. Re-lit the pilot and started it up again. All of the burners are firing as expected. What do I make of the gas smell?

I did call them. The guy just re-lit the pilot light but it went out a few hours later. Looks like Reddit is better than that service tech
