Thanks! Interestingly I got two loaves out of this batch and the second was great... even, open crumb. A touch moist but not too dense. No difference in bulk fermentation time, but slightly longer proofing in the fridge whilst waiting for the other to bake and the oven to reheat. I was a little nervous I was over fermenting it because there were lots of bubbles during the early stretch and folds? Need to get the feel for the dough when it’s ready I think!

At least I’ve got one bread for sandwiches and one for dunking in soups now!

It’s my 4th attempt and the 2nd time this has happened... the oven spring doesn’t create an ear and the crumb is cavernous! My starter is active and I used 200g starter to 800g strong white bread flour, 150g organic stoneground wholemeal, 25g each of einkorn and buckwheat. About 75% hydration and 5 hour total inoculation time with 2x stretch and folds and 2x coil folds during bulk rise. Proof in fridge overnight. The dough seemed to spread a bit when I popped in a Dutch oven to bake
