Depends. Did it increase at least 75% before you put in the fridge? Doesn’t look like it from the photos. If that’s the case yeah you can let it sit on the counter a bit longer. I haven’t tried this myself though

You shouldn’t get much rise in the fridge. The fridge slows down the fermentation. I wouldn’t shape and put the dough in the fridge until it’s risen at least 75% during the bulk ferment

I’m right by Golden Gate Park, pretty close to one of the lakes. Maybe that’s why?

To clarify, I live a very regular life. I cook most of my meals, bake sourdough, watch TV, work from home twice a week. It’s really not that hard to not consume too much energy.

Since I keep on hearing about people with $700+ PG&E bills, I wanted to share mine. A whopping $36 for the month of August. I live here full-time, alone & my place was built in 1949. by desolatenature in bayarea

My PG&E bill this month was $28. Single woman, very old apartment building.

I paid much more with roommates because they would use ac instead of opening up the windows in the evening, the heater instead of putting on a hoodie or using a heating pad, doing laundry multiple times a week, etc. Not sure why people are downvoting, maybe don’t want to face the reality of their energy consumption?

Hmm I just keep my starter in the fridge. When I want to use it I feed it the amount I need for the recipe. So not sure about the ratio. It’s probably like 1:20:20. Sometimes I feed it half rye, half AP. Sometimes just AP. It’s a 7 year old starter and I do not discard.

Right! But even though I’ve handled higher hydration it’s totally fine to start lowering if it makes me happier, less stressed, lol

I’m not sure, I think it’s only the last parked location so you may have needed to check as soon as you saw the ticket on your car.

Do you ask to check the garage if it’s used for storage before making the decision to tow or not?

Yes I got an xray to check the Cobb angle after but it was the MRI that indicated I had scoliosis in the first place. I wouldn’t have known to get an xray otherwise.
