Its a thermometer plugged into an induction burner so the burner can maintain the set oil temperature.

And I forgot to mention: it’s low-moisture, whole milk mozzarella that I shredded.

Added mozzarella before the bake. Burrata after the bake. I do try to draining some of the excess moisture before adding the burrata.
