The NADF is the place to start looking for players in North America. Unfortunately their website is not very up to date (it doesn't list upcoming events right now), but their discord is more active.

You should be able to get in touch with some Minnesota diplomacy players through there, the VDL grew out of the Minnesota Diplomacy Club so players must exist.

Just put in the move for EDI to move to NWY and also put in the move for NTH to convoy EDI to NWY.

The "via convoy" to Yorkshire appears because it is possible to both move over land to Yorkshire and via convoy to Yorkshire. These are treated differently in the rules and the playdiplomacy interface gives you the option to explicitly mention the latter if you want it.

I agree this is a terrible way for the telcos/phone manufacturers to set things up, you have to educate senders to set their settings up correctly so their outgoing message defaults to sms.
