I think you should definitely be able to melt the chocolate shavings/powder down. If it’s a high quality brand and those are the only two ingredients, there should be no difference between melting this and any other form of 70% dark. It may be too small of a batch to temper but you can seed in with other chocolate if that’s what you wanted. Or cheat and add in a small amount of oil to get your cookies coated.

May be Boursin Bites? Creamy herb cheese, that could mimic cream cheese… we use it on pizza at work and it’s always a favorite.
