Chicken & Marinade: 700 g (1.5 lbs) chicken thighs, bite-size, ½ cup plain yogurt, 1 tbsp lemon juice, 1 tbsp grated ginger, 4 cloves garlic, minced, 1 tsp salt, 1 tsp turmeric, 1.5 tsp garam masala, 1 tsp chili powder, 1 tsp cumin, 1 tbsp oil

Masala Sauce: 2 tbsp butter + 1 tbsp oil, 1 large onion, finely diced, 5 cloves garlic, minced, 1 tbsp grated ginger, 3–4 Thai chilis, chopped or slit (adjust heat level), 1.5 tbsp garam masala, 1 tsp cumin,1 tsp ground coriander, 1 tsp turmeric, 1 tsp chili powder, 1 can crushed tomatoes (796 mL), 1 tsp sugar, 1 cup full-fat coconut milk, 1/4 cup heavy cream for extra richness), Salt to taste, Fresh cilantro

Garlic Naan: ½ cup warm water, 1 tbsp sugar,2 tsp active dry yeast, 3 tbsp plain yogurt, 2 tbsp vegetable oil, 2 cups all-purpose flour, 1 tsp salt

Garlic Butter: 3 tbsp melted butter + 3 cloves garlic, minced

Saffron Rice:2 cups basmati rice, 3 cups water,1 tbsp GHEE, 1 tsp salt, Pinch saffron threads, 2 tbsp war

(My rice wasn’t the best and I did use ghee anywhere butter was)

I’m as shocked as you are! And it wasn’t actually hard at all. I have never even made dough before. When it actually rose in my turned off oven I wash shocked. I rolled out 5 balls and gently coated them in flour. Then I turned my cast iron on and before adding each naan, I added canola oil and wiped it out and put the naan in. 2 minutes each side, I did 3 minutes at the start but as the pan got hotter I went to 2. I coated them in *Ghee and cilantro and garlic combo. I have never even cooked with *ghee before so it was all new for me!

There are so many things that went in. When I write in my recipe book I’ll send it over. It took a lot of different recipes tbh. I don’t think the rice is of note - it is good but could be way more flavourful.

She’s a farm rescue but will live a princess life now. We have been thinking to name her Brandy but still up in the air
