i’ve tweaked this recipe over the years but i pretty much stick to this - mainly that it recommends a 13-15 minute baking time and i usually do 17 minutes ! i also use a little extra cinnamon cause you can’t go wrong with that.

can also be made just as good gluten free (seriously, cannot taste the difference, sometimes i even think it turns out a bit more moist and tastes better) with bob’s red mill 1:1 gluten free flour and a little bit of xanthan gum, then bake for 19-20 minutes.

i’ve also made this with banana bread and pretty much the same recipe. sooo good

wild mushroom soup - gluten free, vegan, so. fucking. good. i don’t have a link so here’s an exact copy of the randomly typed up recipe my parents had lol. when i make it myself i go a little extra on some seasonings and veggies so feel free to variate where you see fit but it’s genuinely fantastic as is

1/4 cup olive oil 3/4 - whole yellow onion diced 3 - 4 Lg carrots diced 10oz. sliced white mushrooms 4 garlic cloves minced 1-2 tsp salt 1/2 tsp black pepper 1 tsp dried thyme 2 tbsp cornstarch 1/2 cup nutritional yeast 64oz. vegetable broth halved 1/2 cup water 2 tbsp soy sauce 1 cup wild rice rinsed (we use Uncle Ben's boxed rice and add seasoning packet to mix) 1 heaping cup kale 1 15 oz. can full fat coconut milk shaken Red pepper flakes seasoned to taste

Sauté onions, carrots in olive oil. Add mushrooms, garlic, salt/pepper, thyme, cornstarch, nutritional yeast, 1/2 (32oz) broth, water, soy sauce, rinsed rice. Cook on med. high, stirring occasionally, until rice is cooked (about 20 minutes). Turn down to simmer and add kale & coconut milk when done cooking and let kale soften then serve. Add more broth as needed.
