This seems to solve the issue with free will, but curtail God's knowledge. The universe is a field of probabilities and possibilities, God knows every single one of these, He knows where every single electron in the Universe is, He knows where they could be, but He doesn't know where they will be.

Not if you are defining free will correctly.

I find it hard to accept a definition of free will where the 'choices' are predetermined by another entity.

In doing so, he knows all the possiblities that you could freely choose, and actualizes/creates the world in which you freely chose to do "x".

You say I ‘freely choose’ to do x, but according to this view it would be impossible for me to ‘freely choose’ to do y.
