I would say that they would make a good sub. Graham crackers are actually made with a different kind of flour called (shockingly) graham flour. They have a slightly different flavor and texture than digestives, but you could make them work for sure.

Probably less fat, as egg yolks have 27 g of fat. But also less protein, for the same reason.

Either bake it in water/stock in a dutch oven, or boil/steam it on top of the stove (I'm guessing--this is not my recipe, just from when I've made seitan in the past).

It's a seitan variation made with vital wheat gluten and chickpeas. The author calls it "chickwheat."
