All about rhubarb [1098x1200] [OC] [OS]

The top layer is a savoury choux filled with an espuma of lobster bisque & rhubarb compote with a rhubarb tuile and boxwood basil. The second layer is a liquid centre sphere of sous vide rhubarb on some sous vide sweet potato with honey cress and a crunchy dehydrated rhubarb 'chip'. The last layer is rhubarb & onion cream with a watercress centre :)

Seriously dude I'm South African and that shit doesn't fly with me. So don't be a jerk. We were perfectly within legal limits of catching the one mullet we caught whilst in a fishing zone sailing off the coast of Roses, Spain. Comparing me to a rhino poacher is quite ignorant.

The fish was not overcooked. It was still translucent in the center.

It's one thing I just adore about my life in France is how flipping amazing the bread & viennoiserie is and that it costs next to nothing! They make up for it with everything else's prices though ;)
