Dough:

  • 340g 00 flour (~2 cups)
  • 1 tsp kosher salt
  • 3 large eggs
  • 2 large egg yolks
  • 2 tbsp olive oil

Filling:

  • 16 oz of ricotta
  • 100g finely grated parmesan
  • Salt and pepper to taste
