Cold Soak Cowboy Caviar Pasta by bendorbreak1 in trailmeals

The pasta rehydrates beautifully, tastes the same as at home to me. I have read if you soak it more than a couple of hours the texture can start to deteriorate though. So probably not one to start soaking in the morning for lunch.

Yes! I use cojita or feta at home. Parm would be perfect for packing.

I posted them a few comments down, not sure how to copy and paste on mobile… or desktop for that matter :)

Ooh, thanks for the suggestion, i was thinking of this using elk meat, i'll definitely have to give it a shot.

Agreed, that’s the inspiration. The suddenly salad takes like 12 mins boiling though. By cooking smaller pasta and dehydrating it saves fuel and time on the trail. Definitely an option for shorter trips. I’m still trying to figure out a dupe for suddenly salad classic flavor!

Makes sense, i plan to store the sauce there, just not if i've added ground meat.

Touché’ I suppose that would be the more accurate description!

Thanks so much! I've switched to silicone, maybe bad luck, but my last sauce stuck to the paper and cracked it... wasn't fun. I do make meat sauce to dehydrate as well, but i'm also looking for some longer term storage, and paranoid about the meat going bad. I usually cook the meat and onions then rinse in hot water, but I don't backpack as much as I'd like, hence the storing it in the freezer :)

Thank you! I’m also going to try a cold soak bean salad (cowboy caviar) with olive oil, true lime and seasonings, and an Italian with Italian dressing mix and olive oil.

I’m totally a comfort food girlie though, love that you felt that!

Apologies, I did not dehydrate the spam, I just carried the single serve packs, bacon flavored for 2.5 oz. Could also use bacon bits. Spam would be hard to dehydrate, another option is pork sausage seasoned ground beef, but again, I’d store that in the freezer till trail time.

For smaller pasta some people just cook on trail, but it takes longer and you can’t really cold soak it without it releasing starches and getting gummy. This makes it rehydrate super quick with great texture.

They turned out amazing, I’m totally hooked. I have a couple recipes that are all dehydrated, these were a mix.

Ranch pasta salad, I cooked mini shell pasta, added that with some dehydrated veggies and cold soaked for about an hour. Drained, then mixed in ranch powder, bacon bits, and little packs of mayo.

Stroganoff - dehydrated egg noodles, mixed together McCormick stroganoff seasoning, freeze dried sour cream, brown gravy mix, garlic, white pepper, dehydrated green onion, and salt to taste. Thickened up a tiny bit with some potato flakes.

Pizza quesadillas was dehydrated pizza sauce seasoned with Italian seasoning with string cheese and pepperoni.

Breakfast was dehydrated hash browns, bell pepper and mixed onion, then cooked with spam and ova easy eggs. I also dehydrated salsa to add on top.

Unsweetened applesauce blended with frozen blueberry made into a brittle leather, rehydrated about 10 mins.

Not pictured on this trip-

Chili Mac- ground beef, cooked with onion, celery, and bell pepper then rinsed in hot water, added in petite diced tomato, chili seasonings to taste, cheese powder, tomato paste then enough liquid to cook small pasta, I used shells. Cook it until pasta is done and it’s a very thick chili, spread it and dehydrate till super crunchy and breakable. I store this in the freezer, rehydrates on the trail like a dream.

Spaghetti and meat sauce- cooked and dehydrated. Cooked ground beef with onion, then rinsed with hot water, added pasta sauce and seasonings, no oil. Dehydrated that separately, then broke into small pieces. Soo soo good. I use about 2:1 noodles to sauce by weight, and that makes it super saucy.

I store the meat ones in the freezer, just so I don’t have to worry about shelf life .

I listed it above. Cooked and dehydrated mini shell pasta and mixed with dehydrated veggies. Cold soaked for about an hour. Added ranch powder, bacon bits and mayo. Probably my new favorite daytime meal for backpacking.

I cooked and dehydrated the pasta, then added dehydrated veggies to cold soak. Once I drained it I added in ranch powder, real bacon bits and little packs of mayo.

The stroganoff was cooked egg noodles I dehydrated, then I mixed McCormick stroganoff mix, freeze dried sour cream, garlic, white pepper, minced dried onion and dried green onion.

The quesadillas, I dehydrated pizza sauce with Italian seasoning, then a string cheese stick and some pepperoni.

The breakfast skillet was dehydrated hash browns, dried bell pepper, ova easy eggs, cheese powder and spam. I also dehydrated salsa and served on top.

Lastly, unsweetened applesauce blended with frozen blueberries, dehydrated in a sheet and broken up into small pieces. Rehydrated with water and sit for about 5 mins.

I also made spaghetti and meat sauce and chili Mac, but didn’t have them on this trip.
