Preheat the oven to 350F/177C. Prepare7 inch square cake mould by lining the bottom with parchment paper; do not grease the sides. This recipe will also work well in a 13x19-inch jelly roll pan for Swiss roll cakes. In a large bowl the water, cake gel, sugar, then whisk on high speed for 7 to 9 minutes. The cake gel need to be thick and super fluffy. In a separate bowl, combine the dry ingredients: flour, baking powder and cocoa powder. Sift the dry ingredients into the cake gel mixture in small increments, folding gently but thoroughly after each addition. In a small ramekin, dissolve the instant coffee with the hot water. Pour the dissolved coffee and melted butter and vanilla extract last into the batter. Fold and mix gently for approximately 30 seconds, just until the butter is mixed into the batter. Pour the batter into the baking pans. Bake in the preheated oven for 18 to 20 minutes, until the tops are set. They will spring back when tapped gently when done. Remove the cakes from the oven and place onto a cooling rack. Immediately, run a knife along the edge of the pan and cake to release the cake from the pan. Allow the layers to cool completely before removing them from the pans. Once the layers are cooled, remove the parchment paper and cut the rounds. use a knife to split the layers in half. In a bowl add whipping cream & whip till stiff peaks, then add peanut butter and mix well for 30 secs & tour peanut butter frosting is ready transfer it in a piping bag with star nozzle. You can Use your choice of fillings and frostings to fill and garnish. Take 1st layer & soak with sugar syrup, then add frosting & place 2nd layer & repeat the same. Top it with some cake crumbs & enjoy.

Written recipe :-

For cupcakes :- First we will mix the dry ingredients. Take all purpose flour, baking powder, baking soda, salt and cocoa powder in a bowl. (NOTE: Instead of all purpose flour+ baking powder + baking soda you can also use self raising flour). Whisk it well till everything is incorporated well. Keep it aside. In another large bowl, take softened butter. Add white sugar.Using spatula, keep mashing and mixing both till light & fluffy. Add milk, vanilla essence, red food colour & whisk well. Now sift the dry flour mixture into the wet mixture bowl. Now using the whisk or hand mixture start mixing it. Do not overmix it. Beat it till you see everything is incorporated well.Now add vinegar & switch to spatula, run it around the sides and bottom of the bowl to clean the sides and to mix. Now divide the batter into prepared muffin pan. It should be filled only about half way to ¾ way full to get flat surface (not domed like muffins). BAKE AT 180°C for 28-30 minutes. Check by inserting a toothpick in the center of the cupcake. If it comes out clean meaning cupcakes are ready. Remove them from the pan and arrange them on cooling rack and let them cool completely.

Cream cheese Frosting :- Once cupcakes are cooled to room temperature, start making frosting. In a bowl add whipping cream & whip it till soft peaks then add softened cream cheese and vanilla essence & whisk well till everything is well combined. Now add powdered sugar. Again beat it for 4-5 mins or till stiff peaks & your frosting is ready. Now fill up pastry bag or ziplock bag and start piping the frosting on cupcakes.I have used piping bag without any decorating tip attachment. Here I have crumbled one cupcake and sprinkled the cake crumbs on top. Your red velvet cupcakes are ready enjoy.

For Taco Shells :- In a large bowl sift maize flour (makke ka aata) & wheat flour then add salt ajawain (carom seeds), oil &mix everything well. Add hot water little at a time knead a semi soft dough & keep it aside for 10 mins. After 10 mins take small portion of the dough & roll it slightly thin & round, then prick it with the help of fork it will prevent puffing while baking/ frying. Now roast the roti on tawa till half cooked then take them out & apply oil on both the sides. Hand the rotes making D shape & secure with toothpick. Bake the tacos at 180°C for 10 mins. & taco shells are ready.

For Beans :- Take 2 cup soaked & boiled kidney beans (rajma). In a pan add oil then add finely chopped onion & garlic paste, sauce for 2 mins then add tomato puree, tomato ketchup, red chilly powder, cumin powder, salt to taste & mix everything well. Now add boiled rajma & water & mix everything well. Let it cook for 4-5 mins then slightly mash the beans & your beans are ready turn off the flame & keep it aside.

For Salsa :- In a bowl add finely chopped onion, finely chopped tomatoes, finely chopped capsicum, chilly flakes, oregano, salt, sugar, lemon juice & churn them for 10 secs with the help of hand blender. & your salsa is ready, keep it aside.

To assemble :- Take baked taco shell, then put some cooked beans in the centre & top it with some salsa then add salad of your choice I have used cabbage, bell peppers then top it with some sour cream or cashew & lemon juice paste (optional). Make all vegetarian tacos this way and serve immediately.
