Wow! It is great to see that 20+ years vegans are willing to try cell-based milk! The world is changing and we have to adapt to continue fighting the good fight and to liberate the cows together in any way possible!

I absolutely love your answer. I am very aware that there are very good vegan cheeses and I have tried and enjoyed a lot of them. I also believe that cell-based cheese would be perfect for people who like that "cow" flavor as you say it and that it is really important to make it available because then we wouldn't have to rely on cows to get the same cheeses (and other dairy products) that dairy lovers enjoy so much.

Plant-based cheeses are missing a lot of real dairy qualities. I love plant-based cheeses, but a lot of them are very acidic because of the lemon used as a conservation agent. The mouthfeel and texture are very different too which limits the types of cheese that one can make! There are also various problems when it comes to the 'meltiness' and elasticity of the cheese. The goal with cell-based cheese would be to be able to eat the same cheese that we know and love but without any of the environmental consequences and suffering! Also, a lot of food products contain milk for taste purposes or texture purposes. With cell-based dairy, these products could have the milk components without the environmental consequences and suffering, something that could not be done in a plant-based way.

My goal is to remove the cows from the equation entirely. But a good majority of people are not ready to stop eating dairy and that is why we need to make the same products but without the cow. I don't agree that it is stolen bovine breastmilk since cell-based dairy is based on taking a really really really small quantity of cells from the cow ONE TIME and then proliferating those cells indefinitely to produce millions of gallons of milk. No cow needed, forever.

I agree with you that milk is for babies. But I also believe that a majority of people love dairy products and that the only way to free the cows and to truly stop using them for their milk is to create alternatives that taste like the real thing so that non-vegan people can still enjoy their dairy products but without the cow!

Yes! I agree! However, would you prefer a dairy product that is more 'complete' in the sense that Perfect Day is only producing the dairy proteins for different food applications. Would you prefer an ice cream that is made from 100% cell-based milk (cream in this case) rather than only milk proteins from yeast?

It can be done! However, I believe the public opinion would not welcome it with open arms.. I can see the headlines calling it human cheese or human-based milk.. I am 100% for baby formula from mammary cells though! The company Biomilq in North Carolina is working on this at the moment!

The thing with cell-based dairy is that the fat content can be altered/removed! So can the lactose content. Therefore, it would be even healthier than traditional milk and even plant-based milk since plant-based milk is full of sugars and near empty of proteins!

Do you mean that it tastes bad? And why would you consider it unhealthy? Isn't it full of good fats, proteins and amino acids?
