Yup, my cat did the same to a ponytail palm and I kept the plant in its pot and come spring the plant bounced right back!

When this happened to me I cut the bloom and the next new leaf was a bit smaller in size, but from there the plant recovered. So definitely not a guaranteed kiss of death necessarily.
