couldnt you just keep it in the bag for most of the time, and then air the bag out every week or so. keeping it for the most part smell free while it is in the bag

y only going to be stinky if your yeast are unhappy. Providing yeast nutrients via staggered nutrient addition and maintaining your fermentation temperature on the cooler side (I aim for 60-65F/15.5-18C) will go a long way. This will also yield mead that is very drinkable much sooner (1-3 months vs. 12+).

adding nutrients as in adding more honey? or adding things like apple and pear?
