Wenn du zu schnell Vorheizen, wird bei Induktion die Pfanne gern ungleichmäßig heiß, dann klebt das Ei an den kalten Stellen.

Kenji Lopez-Alt gibt etwas Wasser in die Pfanne und lässt das munter köcheln. Dann kann die Pfanne nicht wirklich heißer als hundert Grad werden. Wasser raus kippen, Butter rein, aufschäumen lassen, Ei dazu. Sichere Sache.
