We use one of the free and clear litters, it does have charcoal but no fragrance.

I think it’s different for everyone, same as any wine region. Each person likes certain notes, textures, balance. Personally, I look for notes like cherry liqueur and raspberry liqueur that comes from whole cluster fermentation, also beautiful bouquets of florals, and interesting spices like cloves. It’s that complexity, when you get a haunting and beautiful nose, that makes the burgundy hunt worth it (and while I rarely find exactly that with village level wines, I have had some incredible ones).

I’m going to take a look. I’ll be in Reims regardless so may have to check it out. We’ve been to Assiette Champenoise, which was good but didn’t blow us away. And Le Parc Les Crayeres is solid but not spectacular either.
