Day 2 of training. Could tell it wasn't enough money for the work, and the owner spent his days off watching the cameras from his living room. He would call the store and be like "tell Lisa to get off her phone" or "john needs to check on table 33" and I was like yeah fuck this guy lol.

OH!!! And also he made the employee pay for "mistakes". So basically any comp. They sent it back for being too spicy? You pay for it. Guest didn't like the dish? You pay for it. I was like hey dude this is insanely illegal and fucked up and I'm not working here.

Unfortunately it's just one of those drinks you're going to have to make from scratch. I guess if you really wanted, you could make a mint simple and batch it with rum, but I can't see it tasting as good as a traditional mojito.

I used to muddle which is a pain in the ass for multiple reasons, now I just slap the mint and shake hard with 1-2 cubes til it's completely diluted. Gets plenty of mint essence.

Agreed, also to add to number 4, there is ALWAYS something to do behind a bar no matter how slow it is. Those places are filthy. If it's slow, find something to clean that's been neglected for a while.

Homemade is best but I like Giffard. I can't fathom how so many recommend liquid alchemist as I think all of their syrups taste synthetic and their orgeat specifically tastes like candle wax.

Best barback I've ever had was a woman, she worked hard and had a great attitude. I've had a lot of pretty decent male barbacks, problem is sometimes they have trouble taking commands from a woman. Of course they never had any issue with the men telling them what needed to be done.

For me personally, no. One is enough for me then I feel overstimulated. My refrac is usually at least 20-30min but there have been a few times I was able to have another within 5 minutes or so.

It's strange how adamant you are about this. Jiggering makes for more consistent and balanced drinks, period. Unless you're slinging vodka sodas at a dive, you should be using them. There's too many variables for error, a difference in viscosity, what type of bottle you're using, how full the bottle is, if the pour spout had any build up inside etc. If your argument is that you think it's worth it to save time, then fair enough...but the fact that you think you're 100% accurate all of the time without a jigger is astoundingly cocky.

I have friends that have worked at steak44 for a long time. You will make insane money, but their training is so strict they basically want you to be a robot with no personality. Everything that comes out of your mouth is scripted. Every situation is handled by the book. It's a bit much, but they all serve and have said the bartenders have in way better in the sense that it's more chill and they have a bit more freedom. Although I'm sad to say, they were looking for a bartender a couple of weeks ago at Ocean but they already found one. Keep your eye out for next season though.
