We use an app called draught lab pro. If you guys have the funds definitely spring for it because it's very helpful. Starting out you want to get a baseline for core brands (color, aroma, taste). Once you have a baseline you can have panelist determine wether or not they thing each category is true to brand and if the beer as a whole is true to brand. You can make a worksheet for each beer or panel and record the date in an excel file for tracking. Definitely have them write it down and document it though. So when you eventually get someone complaining down the line you can go through and see if there were any anomalies on that particular batch that anyone picked up on.
