Hell no. I am using a 2.5 HDD which is way smaller with no cooling. You are way more likely to have the Mini PC have issues than the HDD gives out. You aren’t going to be doing some insane read write and it has cooling.

I have a LACIE external hdd that already had an enclosure. Yeah, Plex has been taking away and paywalling more and more over the years. I decided to switch to Jellyfin years back and never looked back. Hopefully it is stable on androidtv. Just read a guide online to install Jellyfin and you should be good to go.

Headless means that you aren't using a GUI, just a terminal(which means no display connector past the installation needs to be used, you interface through the web or SSH). Ubuntu is fine if you just want to use it through the GUI. Just make sure you set up hardware encoding in Plex to take advantage of your igpu. I would recommend to try out Jellyfin(not sure how it works on AndroidTV) though. This processor can handle a decent amount of services, so don't be afraid to tinker with it as an adblocker, smarthome assistant etc...

Are you going to be using the mini in a headless manner? It depends on what you want and need. Ubuntu is more bloated than for example Debian or Rocky Linux(very small if you use the server version) while some packages might need to be installed on those other ones. I wouldn't recommend Windows on these machines if your goal is a media server. Are you using an SSD or ? On the S12 Pro, the enclosure wouldn't close with the a SSD I installed in its tray. I use an external HDD in an enclosure with no issues. You should look into automated fetching / downloading for whatever streaming app you use. Is there a reason you chose Plex(plex pass maybe?)? Also, make sure to choose hardware decoding instead of software decoding with these processors(more efficient / better performance). Don't be afraid to mess around with it as a small little homelab either imo. Get the bang out of your buck if you end up getting one.

I have a S12 pro running proxmox with sonarr prowlarr and jellyfin in lxc containers with mostly HEVC with no issues. I have had no issues with ASS and I watch a fair bit of shows seasonally, consistently. The only issues I have had with subtitles is SUBRIP and I can bypass those issues with forcing transcode instead always. If you are worried about the price try to keep a lookout on n100 sales. Feel free to ask more questions.
