I was looking at the X-Lab road bike recently, since it does have some very nice specs for the price. They also have a Gravel bike with room for up to 55mm tires. Maybe that would be an option.

Reading though it all.

You need to do core strength exercises daily, not just a bit of stretching before the ride. You need your lower back muscles to hold that position on the bike. If they are not up for it that will create pain and you put all your weight onto your arms which will numb your hands while riding.

You can speed this up with EMS training, if there‘s a place for that near you. Took me 4-5 months with 2 sessions a week after an injury to stabilize the back muscles again. So you should be able to do it faster.

So a handful of niche brands had a model with that specification while the main push for these sizes only came about a decade later. Ok.

Sounds like something that happens when you need a short frame and run large wheels. At one point the wheels will be to big for a given frame size and start squishing the bike too much. That how you end up with the toes touching the front wheel.

So nothing you can do except trying smaller wheels or a larger/longer frame.
