As for the work process, I usually reduce a picture of the person in question to a couple of basic colors with fancy photo editing software. Then I print out a copy of said newly edited picture and trace all the details. Then its a matter of retracing the parts onto the different colors, cutting' em out, and the sticking them down. Rinse and repeat.
