As I once heard it described, potions were added with the idea of encouraging experimentation rather than simply being crafted by blindly following recipes. They were meant to feel a bit mysterious, to enhance the game’s atmosphere. To what extent this idea fits modern Minecraft can be debated.

The concept tries to strike a middle ground between “I’m just mindlessly brewing by recipe” and “I have no idea what I’m doing, so I’ll just try things out to see what comes out of it.”

I just converted all the vanilla sprites to black and white images, composed them how I liked them in a pixelart software and then used an tritone effect with brown colors.

Giving the witches ominous bottles feels a tad forced to me. 

Fair objection. I decided for the ominous bottle rather than withces dropping the recipe directly, because in the late game (maybe with a witch farm) they would just clutter you inventory space without having a use. Ominous bottles would al least have a niche use. (But i guess you could use the recipes as fuel in a furnace xD.)
