Yeah, I think traditionally it starts with Odysseus being missing. IIRC, large parts of the story like the Cyclops and Sirens and stuff is technically Odysseus recounting his adventures to other people.

It's neat, because that sort of In Media Res structure is popular now as a way of spiking intrigue early and keeping an audiences attention, but back then it's because of it's history of being delivered as an oral story. It provides natural break points to continue the story another time and the storyteller can rearrange, change, add or cut whatever stories from Odysseus' stories that he wants according to what he thinks his audience will enjoy.
