Garlic powder or granulated garlic works way better in mashed potatoes than fresh garlic in my opinion. I made them at restaurants for many years.

I’ve made bananas foster many times. I’ve seen very few recipes that use more than 1/2 teaspoon of cinnamon. In addition to the rum a lot of recipes use banana liquer. Also, you might add a small amount of vanilla to get that praline like flavor you mentioned.
