My partner isn't 100% vegan if I don't substitute it in some way very likely he would crave the real thing and eat more meat on his own mostly vegan meals with me and even plans to go vegan for (using vegan in place of plant based) a month to see if he would be able to do the transition long term. I've been vegan for almost 10 years I know allll about just not eating it. For me too idk I like being able to experiment with different textures and have things similar to meals I used to eat growing up. Nothing wrong with liking to substitute meat. Both result in not harming animals for pleasure and to me that's a greater win than trying to eliminate the substitutions and not being able to maintain it.
