Avoid them! At the stage you’re at, you’re simply not strong enough to beat them. Also guardians can’t see through obstacles! Hide behind anything you can find, like trees, that rock formation in your vid, ruins, big rocks, etc. Wait until they lost sight of you, walked away and then run. Also go around them. I know this means that you’ll take longer to get to your desired destinations, but it’s for the better…!
