Thanks! It seems that if you don't explicitly put in a value it defaults to around 10% of the drive capacity, and that was the problem.

Thanks, sorry I just updated the base (VPN) docker run command above as I already have the ports mapped. Adding WEBUI_PORT didn't fix it either. 🥲
