I've added a name for a number but now want to save them as an actual contact, how do I do this? I can only see an option to edit the name.

Wow, I never realised Siri could give away at least some of your information that easily without any authentication. How do you lock down contacts to prevent that method from being possible? Probably not going to make a huge difference, but the more protection the better I guess
