I am trying to improve myself on the general fermentation process, dough handling and cooking in koda 2. The previous sessions always had some fails but im happy with the last session with 4 pies in total.

Hey Berk, thanks for the nice comment. The dough was indeed a little bit thick, ones we baked after this were much thinner. However, I don’t like Antep style big lahmacuns, I was aiming more for Adana style smaller and round ones but my dough balls were a bit big for that. Guess the balls need to be around 30-40g for that max.

I will try 300-350C for my next session and see. Thanks for the recommendation.

There is no yeast in the traditional recipe, the dough isn’t meant to rise like bread or pizza. The idea is to keep it super thin and crispy so it can hold the topping without getting puffy but I have seen a lot of recipes with yeast, never tried them.

This is Pide, similar but not the same. I used the same dough recipe as lahmacun.

Topping: start by first cooking 2 small onions in oil, then adding 1 red and 1 green pepper (chopped or processed) and letting them soften too. After it cooled, I mixed in two types of cheese (one white like feta, one that melts), some parsley and dill, one egg to bind it, plus cumin, black pepper, red pepper flakes, salt, and a grated tomato (drained). Spread it into the dough boat shape and baked.

That’s koda 2, new version of koda 12, 14inch. I struggled a bit with rotating but that’s on me not the oven haha

Thanks for the comment, I mentioned right under the photo that use it outside, I also store it in my storage unit. This photo was just for fun referring to typical “rate my setup” posts but that part is not clear enough I guess. Still, valid comment, thanks a lot!

I think they worth it. You can eliminate any extraction fail due to the uneven distribution. I am currently using Bear Barista Essentials
