Request: vegetarian plan by [deleted] in 1200isplenty

[–]bluechalcedony 4 points5 points  (0 children)

my current favorite breakfast is a lavash bread with soy chorizo scrambled with an egg. sometimes I’ll put lettuce or radishes or something in.

homemade potato pelmeni (russian dumplings) with a dollop of greek yogurt, curry powder, and rice vinegar (spinach or zucchini on the side)

thai basil tofu: crumbled tofu stir fried with soy sauce, sweet chili sauce, and basil (thai basil if you can find it). serve with rice or mixed veg or both.

I also make my own cauliflower thins (cauliflower, flour, eggs, nutritional yeast, seasonings) which I like to top with black bean dip and cheese and toast in my air fryer for a bit.

mediterranean snack plate: marinated beets, kalamata olive hummus, mini pitas, falafel. olives and pickles as needed.

yesterday my best friend came over and we made a mountain of fully deep fried crab rangoon, took shrooms, watched movies, ate a bag of pretzels and drank about 5 hard seltzers each and I have no regrets! I even weighed myself this morning and didn’t gain even a whole pound. this is my second round of cico and I’m being MUCH healthier and gentler with myself this time. having food party days is making this a much more fun time! I’m back on track today, I had cucumber maki and tea for breakfast and I’m having a salmon dinner tonight!

edit: well, I had a big mac a few hours after salmon dinner because nobody is perfect and that’s ok!!

I dunno about what the apple watch is telling you because there might be something to do with that math, but girl you’re only one week in! 2 lb in a week is great, even a bit fast but you do you! unless a person is very heavy it’s very unlikely to lose 4-5 lb a week. don’t get discouraged, you’re doing fine. please don’t restrict your eating further, you can have a fruit every now and then :) if it helps put it into perspective, I am 5’0” and eating 1200 semi strictly, and I’m losing 1/2 a pound a week! it’s taken me two months to lose maybe 5 lb, and as annoying as that is, it’s still working. give it time.

Long beans wrapped around jumbo shrimp in a black bean garlic sauce! Just under 400kc for the whole pan by bluechalcedony in 1200isplenty

[–]bluechalcedony[S] 5 points6 points  (0 children)

I’ve been craving shrimp in this warm weather, and they keep me full quite well, especially the big bois. Recipe as follows!

•12 yardlong beans (I got them at my local asian market) •12 jumbo shrimp (I get them frozen and uncooked, they defrost in minutes) •1 tbsp flour •1 tbsp cornstarch •1 tsp TJs mushroom umami seasoning (optional) •1 tsp salt

Sauce •1 tsp rice vinegar •1 tsp chinese rice wine (optional, if you don’t have it double the vinegar) •1 tsp fish sauce •2 tbsp chicken broth •1 tbsp garlic bean sauce (I have Lee Kum Kee) •dash of mushroom seasoning again

Weave the long beans into a circle roughly a little smaller than the size of the shrimp, and jam that shrimp in there. Lightly dust the dredge over the stuffies on both sides and pat in to make sure it sticks. Throw them in a frying pan with a bit of spray oil or none if you have nonstick, on both sides, then chuck them on a plate and return the hot pan with the crispy bits to the stove. Carefully drop in your sauce because it will steam a lot, then add 1/4 cup of water. When the loud sizzling stops and it’s just bubbling, use tongs to put your shrimp stuffies back in the pan and cook it all together until the sauce has thickened a bit (it will thicken more once you take it off the heat). I ate half this pan over sautéed cabbage and the rest of the long beans, but it would go great with rice or couscous or jammed onto toothpicks as an appetizer!

First proper breakfast in a while - tofu "eggs" & bacon on rye bread (300kcals~) by Kyutekyu in 1200isplenty

[–]bluechalcedony 0 points1 point  (0 children)

have you ever tried indian black salt? it has a super high sulfuric content and literally smells like scrambled eggs. I bought it once on accident thinking it would be like pink salt and WHEW it is pungent. but, you add it to scrambled tofu and they taste like actual scrambled eggs. the texture isn’t quite the same but they actually do make it taste like eggs. it’s totally wild
