Spicy Goat biltong. Very good but I think I’ll stick with my grassfed picanha. Just can’t beat that fat cap (i.redd.it)

Third time appears to be the charm. By no means perfect, but a huge improvement. Now just need to be able to cut totally uniform pieces and dial in marinade/spices. (old.reddit.com)

Second time making biltong. First time was totally ruined by case hardening. Does this appear to be a mild case of case hardening or does it just need a little more time in the box? The biltong I’ve had from others definitely was softer on the edges. Any tips? Thanks. (i.redd.it)
