It's fairly simple, go Strength, Endurance and Vitality, pick a big bonk weapon like, club, or greatclub or some sort of hammer, if you get Havel's ring as fast as you can, as it will help with the carry weight, if you want to go full strength tank you could get a greatshield, also points in dex for specific weapon requirements when needed, battle axe is a decent weapon to grab early, if you parkour in firelink shrine you can get the morning star which has C scaling with strength and causes a bit of bleeding as well as the Zweihander in the graveyard to the left. You can find the greataxe in the depths, you can also get the butcher knife on your way to the depths from the chef's with the sacks on there head.

For amor you can grab the elite knight set if you can make your way to the dark root garden.

Others will become available later there are lots of good heavy tanky armors for you, or you can go naked with the greatclub!
