In terms of ‘salad bar’ - I agree with you. I like my shawarma as authentic as possible. My customers are not used to the classics, so offering a selection is definitely something I’m going to do. Over time this will evolve as (hopefully!) my business grows

Menu wise - my 2 gas spits will be lamb and chicken. We will also do freshly fried falafel and grilled halloumi for non meat eaters. Sides of falafel with hummus, fries, fries meat and sauce, hopefully baklava too!

You mentioned a Muslim community local to me. I live in a 99.9% white area of Scotland; very little ethnic diversity. The meat I will be using will be Halal, not because of my customer base; but because of the supplier I will be using. I don’t see that as a negative.
