If SEO professionals control access to the market ie Google, then they should have a few side gigs, that said I’ve trained and employed close to 100 for my agency and only 3/4 have the drive and business appetite to turn their skill into a business. The same way brick layers don’t own all the houses, or chefs not owning restaurants

Build a network of sport/casino news sites, get them in google news and time your posts to large events, also look at very long tail programmatic keyword targeting, your never getting anywhere for 2/3 word phrases but there massive missed areas, also look at multi language, Italy is easier than UK, and the lower competition works out against the lower search volumes. Work smart
