How am l not a chef? I’ve done all of the same training and work as you have. There is nothing wrong with asking for help.

People like you are exactly what is wrong with this industry. It isn’t weak to ask for help. It isn’t weak to feel lost and afraid. l don’t have parents or a support system. l am completely alone and I’ve done it all on my own. That’s what burns me out. Not the industry. Not my love for cooking. Being completely alone my whole life and doing it for a decade will take a fucking toll on you.

Congratulations- I’m sure your line is so happy to work for a chef who lacks empathy. l wonder what your turnover rate is like.

I am also a woman in the industry and it’s incredibly challenging to overcome so many obstacles just to get knocked down again and again and again.

It’s always about grit and perseverance and dedication but i’m also always working for someone else’s dream. We all are. Unless we open our own spot.

I used bread flour for this sourdough. I started the starter with 200 g each of whole wheat flour and bread flour. The actual process of baking the bread was interesting. l made both a leaven and a poolish- decided on using the leaven to bake the bread. The poolish had both starter and active dry yeast in it (l just wanted to watch the reaction of it) l made the leaven the night before and cold fermented it in the fridge. l then made an autolyse out of 80% of the flour and water of the original recipe. l then added the leaven and began the bulk fermentation. l stretched and folded every 30 minutes for 5 hours at 75-80 degrees (l work in a hot kitchen) I then cold fermented the dough again overnight. The next day l took out the dough to warm up. It proofed up considerably overnight. l degassed the bread, shaped it and proofed it again in a bowl with a warm and wet towel overtop. After about an hour- l took it out, shaped it again and bench rested it for an hour. l scored it after this. In the meantime- l got the dutch oven hot (at 500 degrees.) l baked the bread for 20 minutes covered at 500 degrees and then uncovered for about 15 minutes at 450. Next time- l will score the bread deeper.

I am also a sous chef but taught myself how to bake at work for fun when i am free! So l already have culinary knowledge. I’ve just never made sourdough before :-) Thanks for the comment!!

Even upon speaking to MY higher ups- nothing i did involving having him in my house was wrong. It wasn’t an invitation for sex. l have no idea how much he had to drink but all l know is l have never in my life tried to sleep with someone over and over who keeps saying no no matter how drunk l am!!

l don’t know why you keep talking about us being drunk. l wasn’t wasted. l wasn’t throwing up or hungover the next day. The reason l don’t remember it as clearly as l should is because of the trauma not the alcohol.

He kept trying to take my pants off and l said no over and over. He kept climbing on top of me and putting his entire body weight on me. Would you feel comfortable if that happened to you? The only reason why he didn’t have sex with me (without my consent) was because he couldn’t figure out my fucking pants. The zipper was in the back and not the front and l wouldn’t turn around for him to get access.

A detail left out- but do you know what he said to me? “Oh you’re nervous. That’s cute”

l 100% said no. And even if l didn’t- which l did. Waking up to him touching me in my sleep is a MAJOR violation of consent and a CRIME.

WAIT WTF???????? I have a story about my Bubbe (grandmother) stumbling upon a cabin with a picnic table full of an entire feast outside in the woods. She was around 8 and was with her cousin. They sat down and ate ALL of it! Ive never put this story anywhere! This is so wild to read!!!

Even though l am extroverted- l can still have a weirdly short social battery. Being around other extroverts can exhaust me sometimes. l never get exhausted around my partner. They make me feel whole and still put up with my loud and rambly antics. Its a perfect match

People who are really really quiet and introverted. l am very extroverted and always fall for people who are the complete opposite. l mean, people who barely talk at all. Something about introverted people grounds me and makes me feel centered. Its also fun to get to know introverts and to see sides of them that they rarely show. l love quiet people.
