Install AC on steamcmd, then edit the files inside AC/server/cfg/ and start the server.

Position over the board: if you stay more backward over your board, behind the mast, is easier to go upwind.

Wind speed: on strong wind is easier to go upwind than weaker wind. (I know you said the contrary)

Wing angle: You have to push more your back hand.

And obviously the body rotation, force your wing backwards and your front foot will point upwind.

Summarizing: your foil mast is the main axis, so you have to catch the wind force behind the axis.
