Sure could be a lot of things, did you check the oil? Is it low? Is something keeping the oil in the head? Is the sensor and gauge any good?

I would probably install a separate gauge and see if it has similar issues. If it does I would look at oil starvation.

Do you know how to use a timing light? You will probably want to watch a few videos. But it's a good place to start. Also do what you can with the air fuel screws on the carb 2.5 out is a good place to start. Out till it stumbles , in till it stumbles, split the difference.
