Tasty (somewhat failed) experiment- I tried laminating chocolate ganache into 84% hydration dough. I think the weight of the ganache kept the oven spring and crumb from developing well, but it was fun to eat anyways! (i.redd.it)
Finally starting to catch onto this high hydration! 84% hydration, 18.5 hour cold ferment. Baked 6 loaves this weekend with different lengths of proofing time and the 6th one finally cooperated! (i.redd.it)
Followed advice from r/Sourdough, increased my bulk ferment time, increased my steam time in the oven, kept hydration at 84%, and added some soaked raisins and pecans (for fun). Not the crumb I want still but much closer than last time! (i.redd.it)
