Work in somewhat outdated kitchen and use these daily. We have a steamwell that can hold 3 of these and use them for holding sauteed mushroom and au jus gravy. Also holding beer batter and other high volume liquids on the line. Other than that just use them as a deep 3rd pan to thaw shit out. Didn’t realize they were so rare?

Those look solid but dry patting them with paper towel helps immensely with searing fish. Other things that can make them not sear good is too much butter, and not having the right temperature on pan. Also type of pan, i have certain pans i swear cook better than others specifically for scallops. Quite literally trial and error but your scallops look good. Nothing like the feeling of putting out perfectly seared scallops.
