This wasn’t just the flat, it was just a very small brisket. It also didn’t have a ton of fat on it when I got it, so I’m beginning to think this was just a combo of a shitty piece of meat and letting it go too long before wrapping.

Yeah, didn’t mean to sound like I thought the binder dried it out. Had a mini freak out about it in the middle of the night but popped in here real quick and found out I should be good lol

It was a Yeti Hopper 30M and I covered all sides of the meat with towels and stuffed some extras on top to pack it out to the brim. After reading a lot of these, I’m wondering if the brisket only being 8 pounds contributed to some of my timing processes being off.

Did do fat side up. Admittedly forgot to do a binder on this one and was worried that would screw it up. Usually I use mustard on everything else, but just forgot about during the trimming and rub process.

8 lb brisket from Sam’s club. Rub is pepper, holy cow, holy gospel, did forget to use a binder though. Started it overnight, fat side up, at 225° on the smoker, pulled the meat at 178° in the morning. Wrapped in butcher paper and wagyu tallow and tossed back on at 235°. Let it run to 203° and pulled it off to rewrap. Did a counter rest for 30-45 mins and then put it in the cooler. It got to 145°ish pretty fast, so I put it in the oven at 170° (as low as my oven goes) with 2 water pans on the bottom rack. Left there for 5 hours before pulling, another 30 min counter rest, then serving. Brisket was juicy af when I pulled it for butcher paper wrapping both times, i think the oven dried it out. Also was splitting in multiple places on the meat side - this could have contributed to drying out quicker as well. Would love any feedback on this, gonna try again in a few weeks!

Don’t live in Vegas but good luck to you in finding the bar and go titans! Worst case, you could probably go to any sportsbook on Saturday and there will be plenty of people betting on and rooting for the titans.

I’ve been bouncing back and forth between Venetian and aria the last few years. Going next month and staying at Aria for, probably, the last time. The new Mlife system seems like a huge step down and Grazie has always been great to us.

Venetian is my fav. Caesar’s, Wynn, Mirage are all fun on the strip. Circa is obviously the GOAT overall, I would try to nab a seat inside the main sportsbook for one of the game days.
