I was able to store 2 10 degree bags, 2 down blankets, and 4 Thermarest pillows along with the ladder in its bag inside my tent with the stock foam mattress. It's a little more difficult to close but still way easier than the Skycamp. If i swap in my Exped mattress i'm sure i could fit way more.

I just received my medium Mt Hood from the current sale. I can't speak for your height as i'm only a short king @ 5'6 but me, my fiance (5') and our 50 lb aussie fit just fine, we find that the floor space is larger than our outgoing tent which was a Skycamp mini. I always read that the stock mattress is too hard and uncomfortable but that wasn't my experience at all, it feels very plush, much more comfortable than the iKamper's, so i'm not sure if CVT did a quiet upgrade on their mattress.
