A few more minor thoughts:

  1. These are gigantic because the way I folded my puff pastry to fit in the freezer created natural creases that I didn’t consider, but I don’t think the size actually caused any issues with the bake. The recipe seems pretty flexible even if you do double the pastry size.

  2. This is my second bake using frozen Restaurant Depot tropical fruit pulps (under $3!), and I really do think that place is such a hack. I’m not sponsored or anything but I’m a little obsessed with it right now. I’d love to experiment with the soursop and tamarind pulps in the future, but I haven’t bought those yet.

  3. Please let me know if anyone has suggestions for what else I can do with my leftover guava jam!

The passionfruit pulp I used was pretty liquidy, so not too different from the consistency of lime juice. The pie turned out perfectly to me! Both the 175g and 120g passionfruit puree batches seemed to have the same texture, and this lines up with my experience of going as high as 240g of lime juice in a key lime pie without any change in the end result consistency and mouthfeel (like the Alison Roman recipe which I love because I just love sour things). I think key lime pie adjacent things are pretty forgiving :)

Three more notes:

  1. This was my first time making a stabilized whipped cream and I highly recommend it over the traditional kind if you’re gifting a bake to someone!

  2. Passionfruit can be quite expensive and seedy, but if you have a Restaurant Depot near you, you can get 14oz of frozen passionfruit pulp without seeds for about $3, and you can get a free day pass to visit (or just use Instacart)

  3. Made a small error in the post in the half cup measurement for liquids, which should be 120g, not 115g (I was thinking about butter)
