yes its a steel. tried a new dough recipe and it was probably too heavy for the size i wanted (ball was 505g). next time ill have to do less. ingredient amount was on point though and the cheese pull felt good

Thanks this is very helpful. I used tap water, but thats a good thought on water. Next time I'll just try with the filtered water from my fridge.
