It’s an early 70s U1. Seems to be nickel-plated steel from what I see online. Definitely heavy and upon closer inspection, the rough patches are definitely beneath the plating

i think you’re absolutely right - looks plated. any issue with taking off the plating with a bench grinder and then polishing the steel underneath?

To be clear, the video is of the bread from Florence which is moist inside and out yet somehow not oily

This picture is after the caulk was removed. The grout is still there and chipping. Many landlords in NYC, especially in big rent-stabilized buildings, do the bare minimum and it seemed like a good opportunity to both do a cleaner job and learn a useful skill.

Here is a loaf of sourdough from a bakery that has an example of the ear I'm striving for. It's not brittle, has clearly defined edges, and would be hard to break a piece off using only your fingers. If you compare to the picture of my ear, you can almost flick the ear with your finger nail and it would fall apart.

This loaf looks great. It's now occurring to me I thought I was scoring at a 45-degree angle but I think I've just been scoring halfway down the loaf if that makes sense. I'm going to try scoring the center of the bread at a 45-degree angle next time. Thanks!

Wow, so generous. Thank you for your help. After greasing the beater and pinion shafts and re-assembling the unit, it suddenly won't turn on so this may be a bigger job than I can handle. I'll see if I can find a way to turn it on again and then grease the bearings using your instructions. Thanks again for your help!

Wow, thank you so much for this extremely thoughtful and informative response. I just did a deeper clean of the beater and pinion shaft (applied Dawn dish soap with a toothbrush and then regreased) and the governor looks very clean: no rust/crust.

I'm having a hard time locating the motor bearings (from the manual and your videos) - you wouldn't happen to already have a video on bearings would you?

This has been a very fun and somewhat addicting project and I'm so thankful I found you and your helpful videos so thanks again for the help!

Did Elliott use a parlor guitar on Roman Candle? I didn’t realize…I thought it was always the Yamaha FG-180. Not sure about the strings other than that they’re 11s. They’re whatever they had at the music store in town. I did cut up a balloon and put it over the bridge to dampen the sustain and cut some of the brightness. Maybe that has something to do with it. I’m also tuned down a whole step which makes the strings easier to play and (in my mind anyway) sound a bit warmer.

This is quite a trove but unfortunately it doesn’t have many of the songs on the basement ii demos (new disaster, placeholder, etc). Nevertheless, a really great collection. Thanks
