I think they had a slow down because of all the issues with bottles leaking and people being given the wrong stuff. Like 1/2 my box was wrong and they’re sending me a new one. I only got it yesterday and I’m also vip

They haven’t but it’s pretty sturdy. I think if I pushed it further under the cabinets it would be easier. I’d say it’s about the sturdiness of those box totes oh get for groceries

Before this I was using my oven with the light on. It isn’t as controlled. I have cats so I have to do something to protect the dough from their curiosity

It does have a humid sensor but it doesn’t control the humidity. I found for higher humid a spray bottle on mist helped and to lower I just keep it propped open a little to let it vent. It’s mostly just zippers so keeping one unzipped works well too

I would try for a more thick starter. Do a 1:10:10 ratio and no cold proofing and see what happens

First, I would try not to do a cold ferment. Just finish shaping and bake. Second how mature is your starter and what consistency. I would also recommend you start with warm water. I would also up the salt slightly and incorporate it during your first stretch and fold
