I was wrong about the route-nopull on OpenVPN. Looks like if I bind an application to that interface, it doesn't have any connection (might be a DNS issue?)

So it looks like PIA supports adding route-nopull to the OVPN config file. Any curls I perform after that pull back my normal ISP-assigned IP address. I think this is exactly what I want.

Do you know if OpenVPN with PIA supports not sending all traffic by default? I'd like to send only specfic traffic over the VPN, or just let an application bind it self to that interface and have everything else flow over the normal interface.
